The peach (Prunus persica) is a deciduous tree native to the region of Northwest China between the Tarim Basin and the north slopes of the Kunlun Mountains, where it was first domesticated and cultivated. It bears edible juicy fruits with various characteristics, most called peaches and others (the glossy-skinned varieties), nectarines.
The peach, whose scientific name is Prunus Persica, is a peach fruit: it is a botanical category that includes, in addition to peaches, other fruits with seeds such as apricots, cherries, plums and almonds.
The peach is a typical drupe, a non-fleshed fruit with a thin outer part (exocarp or peel), a fleshy middle part (mesocarp or pulp) and a hardened woody inner part (woody endocarp or stone) that contains only one bone seed . The peach is a round fruit, divided by a longitudinal ridge and covered with a thin velvety skin. Peaches are juicy and sweet, more or less acidic, with an aromatic and sweet flesh that can be white, yellow or red, with a thin skin, velvety or smooth, yellow to reddish-pink, salmon-pink, with a hard stone containing an almond (seed) that may or may not adhere (adherent stones) to the flesh of the peach. Peaches, like any other type of high-quality fresh fruit, must be firm to the touch but not too hard and must not have any bruises or soft parts; in addition, the skin colour must be light.
Thanks to its qualities, its juiciness and its refreshing properties (85% water and citric acid), the peach is one of the fruits of summer par excellence, consumed mainly as a fresh fruit, but also as a main ingredient for processing peaches destined for industry (e.g. syrups, peach jams, 'percoche' peach jam, peach liqueurs or flavourings for drinks). Recently, peaches have also been very successful in cosmetics for beauty treatments for the face, body and hair. Contains about 28 calories / 100 gr. Peaches are a revitalising fruit with a very good content of vitamin A and C; they are a diuretic and laxative fruit as they have a cleansing effect on the body and improve the functioning of the intestines and kidneys. Peaches are a stomach-friendly fruit and for this reason they are also recommended in the diets of people with digestive disorders. Moreover, peaches do not contain gluten and are therefore also suitable for people suffering from coeliac disease. Peaches have a purifying effect on the body, regulate the alkalinity of the blood and stimulate the secretion of the stomach; they are also excellent for rheumatism, arthritis and kidney inflammation; however, care should be taken as allergic reactions may occur in predisposed people, especially children. The leaves, flowers and the almond in the peach pit contain a poisonous chemical that gives off hydrocyanic acid: therefore, absolutely do not eat them.
